Hey, hey everyone!
Coffee with me? ☕
For this
SundayX, I'm filling in the gaps a bit for my decreased presence on X lately.
✨✨✨
I've been hyper-focusing on nutrition!
Pouring over nutrition information, recipes and re-orienting myself about macros and finding my right balance.
Also tweaking my recipes, in some cases revamping, or completely throwing out my favorite recipes.
I'm putting a ton of work into getting the vehicle that houses my operating system back on it's train tracks. 😂
Two things I've added so far—
1. Quinoa porridge for breakfast with a small egg.
Hear me out!
It's a complete protein source!
Quinoa contains all nine essential amino acids, making it a great protein source, especially for vegetarians and vegans.
I'm not vegetarian but I don't eat a lot of meat either. I'm trying to boost my protein though and quinoa helps with this.
Oatmeal is still in rotation just not on the daily for me right now.
Rinse it x3 before cooking to remove saponins or it will be bitter.
Seasoning is key, I like mine savory for breakfast so I use savory spices to taste and just a smidge of salt.
When it's almost done I crack an egg in it to cook & breakfast is on!
(Time saver, I triple rinse 1/8 c quinoa and let it soak over night. Cuts down cook time the next morning.)
And now for my second addition—
2. Hummus is a staple in my fridge now.
There are so many benefits from hummus: • anti-inflammatory
• heart healthy
• nutrient rich
• high in fiber
and more!
It can be used as a spread on sandwiches, as a dressing thinned down, added to soups for thickening & more.
Oh how I love Sabra hummus.
Historically it's been a splurge instead of a staple because I'm the only one in the house that likes it and I can go through it quick, so the cost would also add up rapidly. 😂
It's so easy to make though and I don't know why I didn't start making my own sooner.
I prefer using white beans instead of chickpeas.
Tahini, lemon juice, garlic and olive oil are the base & boom, you got hummus!
Add an ice cube to the blender while processing for the creamiest hummus.
I like to add cayenne and a Thai spice blend to mine.
I'm curious to know what seasonings you guys prefer in your hummus?
Thoughts on quinoa?
